The vision of chef Víctor Planas
At the helm is Víctor Planas, partner and executive chef, with over 22 years of experience in Michelin-starred restaurants.
His menus are crafted with the freshest, highest-quality ingredients, like Balfegó tuna, thin-shelled molluscs, Koshihikari rice, Atlantic sea bass from Aquanaria, and gourmet products from Bioislas, A5 wagyu… and in addition, all preparations and fermentations are made in-house; delivering unique flavours, textures, and presentations that honour Japanese culinary tradition.
